Whoopie Pies

A customer requested Whoopie Pies; never having made them, I started testing recipes and also purchased the book on the subject. This is a tough product to get right; the filling calls for large amounts of shortening (in fact, it was one cup of Crisco whipped with one cup of store bought Marshmallow Cream and some powdered sugar. It sounded awful, but I actually made it; thinking that some magical alchemy might make it work. It did look good; but the flavor was just as you imagine it to be. Bleh...
I finally ended up making a from scratch marshmallow filling; sweet and light, and a good chocolatey aftertaste from the cake like cookie.
I'm looking forward to making these again with a pastel tinted filling for the spring season.
